Can I admit that I created this light, healthy cherry bean salad as an accompaniment to hot dogs last night? I felt so guilty eating hot dogs because, well, they pretty much stand for everything I’m against in food. Processed, fatty mystery meat. Ugh! Yet slather it with yellow mustard and it’s going to be hard for my convictions to stay put.
For the dressing:
3 tablespoons of Extra Virgin Olive Oil
3 teaspoons of balsamic vinegar
2 heaping teaspoons of cherry jam/jelly (not jelly in the British sense! They call Jell-O “jelly”)
1/8 teaspoon salt (or to taste)
For the bean salad:
1/2 cup of pitted and diced cherries
1 can of mixed beans, rinsed and drained
Handful of snap peas (mange tout), green beans, or any other kind of crunchy green pea/bean
You don’t want too many, because although they provide an excellent, fresh crunch to the salad they don’t readily soak up the dressing so you may find yourself fishing out the beans and cherries from the bottom. I made this mistake the first time!
